旁白:梨山茶是高級工藝,要做好,真的很難。
Narrator: LiShan Tea is an advanced craft, and it’s difficult to make well.
旁白:做茶有多難,梨山土生土長的茶農,陳孟智最知道。
Narrator: It is Meng-Zhi Chen, a tea farmer born and raised in LiShan, that knows how difficult it is to make tea.
陳孟智:在工作的環境下是原始森林,然後跟茶樹一起生長,看看昆蟲,看看土壤,想一下 說下一季的茶葉我們要做什麼樣的風味給大家去品嚐。
Mr. Chen: We work in the natural forest, grow with tea trees, and look at the insects and soil. Then, we begin to consider what kind of tea’s flavor we want to make for everyone in the next season.
旁白:說得一派輕鬆,但6年前陳孟智剛回到自家茶園耕作,一季春茶就幾乎把他擊垮。
Narrator: Though Meng-Zhi Chen put it slightly, 6 years ago, when he returned to his tea garden to cultivate, he was almost defeated by the tea growing in spring.
陳孟智:一開始剛銜接的時候,我就是以電腦工程師的方式去做管理也好,製作也好,在製 作過程才發現說,這不是單單像電腦工程這麼簡單。
Mr. Chen: In the beginning, I managed and produced the tea as a computer engineer. However, it turned out that it’s not as easy as computer engineering during the production process.
旁白:電腦工程師出身的他,千算萬算,算不到老天爺根本不想讓他算,高海拔的茶區優勢
變成劣勢。
Narrator: Though being a computer engineer, he couldn’t measure that whether it was appropriate to grow tea here in the mountain. And advantages of high-altitude tea areas turned out to be weaknesses.
陳孟智:在海拔兩千公尺以上高山,它的早晚溫差極大,在製作過程當中你發現你會被天氣 所影響。
Mr. Chen: In the high mountains, 2000 meters above sea level, the temperature difference between morning and evening is dramatically great. And you will find that everything depends on weather.
旁白:梨山的好,不只山好,茶好,製茶的工藝更好。
Narrator: LiShan tea is not only good at mountain and tea itself, but also at the excellent
tea-making craftmanship.
陳孟智:茶湯顏色,綠中帶黃,就是代表著梨山茶高海拔的香氣與喉韻,你如果太青,他只 有香氣沒有喉韻,那也很常有一些人會有腸胃不適的問題。
Mr. Chen: The green with yellow color in the tea represents the high-altitude aroma and throat rhyme of LiShan tea. If the color is too green, then there is only fragrance but no throat rhyme, which can even cause discomfort in stomach.
旁白:結合好茶與好工藝,他的梨山茶才真正開花結果。在台灣獲獎無數,更連續三年拿到
比利時 iTQi 三星認證的水晶獎盃。
Narrator: With the good tea and the extraordinary craftmanship, LiShan tea becomes well-known. It has won several awards in Taiwan, and even got Belgian iTQi three-star-certified crystal trophy for 3 consecutive years.
陳孟智:我是梨山小孩,我想把梨山茶做好,讓世界因為好茶認識梨山,更認識台灣,這樣 我就心滿意足了。
Mr. Chen: I’m from LiShan. I want to make the best of LiShan tea so that people around the world can know LiShan and the country, Taiwan, better. That’s all I want.
